Ingredients:
1 can chickpeas, drained and rinsed
1 cup marinated artichoke hearts, drained
1 clove garlic, minced
2 tbsp tahini
Juice of 1 lemon
2-3 tbsp cold water (adjust for consistency)
½ tsp salt (adjust to taste)
2 tbsp olive oil (extra for topping)
Method:
Blend the Ingredients:
In a food processor, combine the chickpeas, artichoke hearts, garlic, tahini, lemon juice, oil and salt.
Blend until smooth, adding cold water one tablespoon at a time until you reach your desired creamy consistency.
Taste and Adjust:
Taste the hummus and adjust seasoning with more salt, lemon juice, or water if needed.
Serve:
Transfer the hummus to a serving bowl and drizzle with olive oil on top.
Optionally, garnish with herbs and seeds
