Ingredients:

  • 1 can chickpeas, drained and rinsed

  • 1 cup marinated artichoke hearts, drained

  • 1 clove garlic, minced

  • 2 tbsp tahini

  • Juice of 1 lemon

  • 2-3 tbsp cold water (adjust for consistency)

  • ½ tsp salt (adjust to taste)

  • 2 tbsp olive oil (extra for topping)

Method:

  1. Blend the Ingredients:

    • In a food processor, combine the chickpeas, artichoke hearts, garlic, tahini, lemon juice, oil and salt.

    • Blend until smooth, adding cold water one tablespoon at a time until you reach your desired creamy consistency.

  2. Taste and Adjust:

    • Taste the hummus and adjust seasoning with more salt, lemon juice, or water if needed.

  3. Serve:

    • Transfer the hummus to a serving bowl and drizzle with olive oil on top.
