Asian Roasted Salmon With Avocado And Grated Carrot

I love this omega packed dish with salmon fillets marinated in a tantalising blend of tamari, sesame seeds, dijon mustard, and fresh ginger. Accompanied by a refreshing Avocado and Grated Carrot Salad, tossed with zesty orange segments and drizzled with extra virgin olive oil, this dish is a true celebration of vibrant flavours and wholesome ingredients.

Ingredients:

  • 1 Salmon Fillets

  • 2 Tbsp. Tamari

  • 1 Tbsp. Sesame Seeds

  • 1 Tbsp. Dijon Mustard

  • 1 Tsp. Fresh Grated Ginger


Avocado And Grated Carrot Salad



  • ½ Avocado

  • 100g Carrots

  • 1 Orange

  • 1 Tbsp. Extra Virgin Olive Oil

  • Maldon Sea Salt & Fresh Pepper

Method:

  1. Preheat the oven to 180ºC

  2. Rub the salmon fillets in the tamari, ginger, mustard and sesame seeds

  3. Roast in the oven for 12-15 minutes until just cooked through

  4. Prepare the dressing by combining the orange zest and juice with the olive oil, pepper and a pinch of salt

  5. Thinly slice the avocado and mix with half the dressing

  6. Grate the carrot and mix with the remaining half of the dressing

  7. Serve the salmon on top of the avocado and carrot
