Asparagus and Feta Frittata

Frittatas are a great meal prep recipe for breakfast or lunch. Protein packed and also a great recipe to shove leftovers into. Chop up your old veggies in the fridge and pop it in. I love putting in leftover meat and roasted veggies also.


This dish has a spring feel to it thanks to the asparagus and lemon zest. Its so tasty and keeps in the fridge for 3-4 days. 


Ingredients:

  • 6 eggs

  • 1 block of feta

  • 1 bunch of asparagus, trim the bottom

  • 1 lemon 

  • 100ml of plant or whole milk

  • 2 tbsp of chopped parsley 

  • salt and pepper

  • olive oil

Method:

  1. Preheat the oven to 180 C.

  2. Grease a roasting tin with olive oil or line with baking paper.

  3. In a bowl whisk the eggs with half the zest of the lemon, the milk , salt and pepper.

  4. Pour into the lined tray and add the asparagus. 

  5. cut the feta into cubes and add on top with the parsley.

  6. Roast for 20-25 mins until cooked through.
