Chicken Burgers with Avocado and Sweet Potato Chips

Juicy chicken patties are topped with creamy mashed avocado and served alongside crispy sweet potato chips, creating a deliciously wholesome meal that's sure to please.

Ingredients:

  • 250G CHICKEN BREAST

  • 2 SWEET POTATOES

  • 1 AVOCADO

  • 1 SPRING ONION

  • 1 GARLIC CLOVE

  • ZEST OF 1 LIME

  • JUICE OF 1 LIME

  • FRESH CORIANDER

  • 2 TBSP. TAHINI

  • 2 TBSP. SESAME SEEDS

  • 1 TBSP. AVOCADO OIL

  • ½ TSP. SMOKED PAPRIKA

  • 1 TSP. CUMIN

Method:

  1. Roughly chop the chicken and crush the garlic

  2. Place the chopped chicken, half of the lime zest, coriander, smoked-paprika and crushed garlic into the food processor. Blitz until it turns into a mince (alternatively, buy pre-minced chicken and combine with ingredients)

  3. Roll into two patties and leave to marinate in the fridge

  4. Preheat the oven to 200ºC

  5. Mix the other half of the lime zest with the cumin, avocado oil and another big pinch of salt and pepper

  6. Chop the sweet potato into wedges and coat with the spice oil mix

  7. Roast in the oven for 40-45 minutes

  8. Meanwhile, heat a griddle pan to a medium heat and fry the chicken burgers for 6 minutes approx. on each side until cooked through

  9. Mash the avocado and finely chop the spring onion, combine with the lime juice, tahini, sesame seeds and a pinch of smoked paprika to create guacamole

  10. Serve one of the burgers with a dollop of guacamole and the sweet potato chips
