Chicken, Black Bean, Sweet Potato Tray Bake

These salad is my go to for meal prep. Its a tray bake so its super simple to make and packed full of fiber, protein and plant points. It really ticks off all the boxes!


Eat is fresh or put it in an airtight container for meal prep for the week!

Ingredients:

  • 4 organic chicken thighs, boneless and skinless

  • 2 tbsp of olive oil

  • 1 lemon juiced

  • 1 tsp of smoked paprika

  • 1 tsp of garlic powder

  • 1/2 tsp of chilli flakes

  • salt and pepper

  • 1 can of black beans or other beans, rinsed

  • 2 corn of the cobs, kernels shaved

  • 1 large sweet potato, cubed

  • 6 spring onions, top and bottom cut off

  • 2 red chillis


Radish and Cumber Salad


  • 8 radishes, sliced

  • 1/2 cucumber, cubed

  • 1 tbsp of sesame seeds

  • 1/2 lemon juiced

  • 1 tbsp of olive oil

  • sea salt 

Method:

  1. Preheat the oven to 180C.

  2. To make the chicken - Mix everything in a bowl and pop onto a tray.

  3. Bake for 25 mins.

  4. Remove the chicken and pop the rest back in the oven to cook for another 10 mins.

  5. Remove and slice up the chicken mix back the rested chicken.

  6. To make the salad - mix all the ingredients together. 

  7. Eat then or pop into Tupperware.

  8. These will last 3 days in the fridge in an airtight container.
