Chickpea and Quinoa Stacked Salad

Welcome to a plate brimming with vibrant flavours and wholesome goodness! This Chickpea and Quinoa Salad with Crunchy Cucumber and Juicy Tomato is a celebration of nourishing ingredients that come together in perfect harmony. Imagine tender quinoa mingling with protein-packed chickpeas, while crisp cucumber and succulent tomato add a refreshing burst of freshness. Drizzled with a zesty dressing, this salad is not just a meal—it's a vibrant symphony of flavours that will leave you feeling energised and satisfied.

Ingredients:

  • 1 can of chickpeas, rinse and drained

  • 75g of quinoa

  • 1/2 cucumber, cubed

  • 1o0g of cherry tomatoes, sliced

  • 6 radishes sliced

  • 3 tbsp of chopped mint


Dressing


  • 1 lemon juiced

  • 6 tbsp of olive oil

  • 1 grated garlic clove

  • 1 tbsp of grainy or dijon mustard 

  • salt and pepper 

Method:

  1. Rinse and cook the quinoa with some salt as pack instructions or you can use pre cooked quinoa.

  2. Rinse the cooked canned chickpeas.

  3. Whisk the dressing together

  4. Slice up the veg

  5. Into 3 lunchboxes or pots place 1/3 of the dressing then a 1/3 of the chickpeas, veggies, quinoa and herbs. Season and repeat with the other two containers. 

  6. These will last 3 days in the fridge.
