Bursting with the comforting flavours of ripe banana and decadent chocolate chips, this baked oatmeal is both nutritious and satisfying. Topped with slices of fresh banana, it's the perfect way to fuel up for a busy day ahead.
Ingredients:
2 ripe bananas, mashed
1 banana sliced
200g rolled oats
400ml almond milk
3 eggs
2 tbsp of maple
50g of chopped almonds
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
100g dark chocolate chips or chopped dark chocolate
2 tbsp of flaxseeds
Method:
Preheat your oven to 180°C (350°F). Lightly grease a baking dish or casserole dish with cooking spray or oil.
In a large mixing bowl, combine the mashed bananas, almonds, eggs, rolled oats, milk, maple syrup or honey (if using), vanilla extract, and ground cinnamon. Stir until well combined.
Fold in the chocolate chips until evenly distributed throughout the mixture.
Pour the oat mixture into the prepared baking dish, spreading it out evenly with a spoon.
Arrange additional banana slices on top of the oat mixture for extra sweetness and flavor.
Bake in the preheated oven for 25-30 minutes, or until the oats are set and the top is lightly golden brown.
Once baked, remove the dish from the oven and let it cool for a few minutes before serving.
