Chocolate Chip Protein Cookies

I love these cookies. They are so tasty and you can't believe that they are protein packed. Perfect post dinner or as a snack at 4pm. You can switch up the choc chips for raisins or white chocolate. Make them your own! Bake up a batch for the week ahead!


Ingredients:

  • 100g of butter or coconut oil, melted

  • 150g of maple or honey

  • 100g of peanut butter

  • 1 large egg

  • 1 tsp of vanilla extract

  • 100g of ground almonds

  • 50g of oats

  • 3 scoops of protein powder (3 heaped tbsp)

  • 1 pinch of salt

  • 70g of dark chocolate chips

Method:

  1. Preheat the oven to 170C.

  2. Pop everything apart from the chocolate in a bowl. 

  3. Mix well then divide into 9 balls.

  4. Flatten on a lined baking tray. 

  5. Add the chocolate and bake for 12 mins in the oven until bronzed.
