Made with ripe bananas, eggs, and a touch of maple syrup or sugar, this recipe brings natural sweetness and moisture to every bite. Ingredients:

  • 4 bananas (ripe)

  • 4 eggs

  • 100g of maple or sugar

  • 100g of butter or coconut oil

  • 1 tsp of cinnamon

  • 100g of ground almonds

  • 150g of rolled oats

  • 50g of walnuts

Toppings:

Walnuts and faked almonds

Method:

  1. Preheat the oven to 180C.

  2. Pop all the ingredients in a food processor or blender and blend until combined. 

  3. Line a baking tin with baking paper, add the mixture and top with nuts. Bake in the oven for 40 mins. 

  4. Take out and leave to cool then slice up.

  5. This lasts 5 days in an airtight container or you can freeze and toast also.
