Feta and Courgette Frittata
Serves 4
I love this frittata for lunch of breakfast. Its a great meal to meal prep as its lasts a 3 days in the fridge.
Ingredients:
8 eggs
1/2 block of feta, cubed
1 courgette, thinly sliced
20g of dill, finely chopped
salt and pepper
40g of spinach, thinly chopped
2 red onions, thinly sliced
Method:
Preheat the oven to 200C.
Whisk the eggs together in a bowl with the salt and pepper.
Add in the sliced courgette, dill, spinach, red onion and feta.
Grease a cake tin or baking tray.
Bake for 20-25 min until cooked through.
Check its cooked through, slice up and store in airtight containers in the fridge.
