Feta and Courgette Frittata

I love this frittata for lunch of breakfast. Its a great meal to meal prep as its lasts a 3 days in the fridge. 


Ingredients:

  • 8 eggs

  • 1/2 block of feta, cubed

  • 1 courgette, thinly sliced

  • 20g of dill, finely chopped

  • salt and pepper

  • 40g of spinach, thinly chopped

  • 2 red onions, thinly sliced

Method:

  1. Preheat the oven to 200C.

  2. Whisk the eggs together in a bowl with the salt and pepper.

  3. Add in the sliced courgette, dill, spinach, red onion and feta. 

  4. Grease a cake tin or baking tray.

  5. Bake for 20-25 min until cooked through. 

  6. Check its cooked through, slice up and store in airtight containers in the fridge.
