Green Goddess Bowl with Hummus

Glow Bowl

I love this Glow Bowl. Packed Full of veggies and delicious home made hummus. Feel free to buy the hummus pre-made if you prefer but trust me its so simple to make!

Ingredients:

  • 1 Large Chicken Breasts (Roughly 200g)

  • 40g Olives

  • 1/2 Cucumber

  • 1 Beef Tomatos

  • Juice Of 1/2 Lemon

  • 1 Tbsp. Sesame Seeds

  • 1 Tsp. Dried Oregano

  • 2 Tbsp. Extra Virgin Olive Oil

  • Maldon Sea Salt And Fresh Pepper


Hummus


  • 1/2 400g-Can Of Chickpeas

  • 1/2 Garlic Clove

  • Juice Of 1/2 Lemon

  • 2 Tbsp. Tahini

  • 2 Tbsp. Extra Virgin Olive Oil

  • 1/4 Tsp. Smoked Paprika

  • 1/4 Tsp. Cumin

  • ½ Tsp. Maldon Sea Salt

Method:

  1. For the Hummus: Blend the chickpeas, tahini, garlic, smoked paprika, cumin and sea salt together

  2. Pour in the lemon juice and extra virgin olive oil. Blend until smooth

  3. For the Salad: Rub the chicken fillets in oregano, a pinch of salt and ground pepper

  4. Heat 1 tbsp of olive oil and grill the chicken for 6 minutes on each side until cooked through

  5. Peel the cucumber and cut both the tomato and cucumber into cubes

  6. Finely chop the dill

  7. Place cucumber, tomatoes and dill in a bowl with mix with the olives and olive oil

  8. Plate with the chicken and hummus and squeeze half the lemon over the top

  9. Sprinkle with sesame seeds and sea salt to taste.
