Gut Health Energy Balls

These gut-friendly energy balls are the perfect snack for a quick boost, packed with ingredients that nourish your digestive health. The combination of flax seeds, ground almonds, and peanut butter provides plenty of fibre and healthy fats, while cacao adds a rich, satisfying flavour. Rolled in desiccated coconut for a light crunch, these energy bites not only taste great but also keep your gut happy and energised throughout the day.

Ingredients:

  • 2 tbsp cacao powder

  • 150g peanut butter (natural, no added sugar)

  • 2 tbsp maple syrup

  • 150g ground almonds

  • 30g of flax seeds

  • pinch of salt

  • ¼ cup desiccated coconut (for rolling)

Method:

  1. Mix the Ingredients:

    • Place everything apart from the coconut in a food processor and blend until combined. This recipe can also be made in a bowl mixing together until combined. 

  2. Form the Balls:

    • Using your hands, roll the mixture into small, bite-sized balls (about 1 inch in diameter).

    • If not binding well add a tbsp of water or a little more maple. 

  3. Roll in Coconut:

    • Spread the desiccated coconut on a plate and roll each ball in the coconut until fully coated.

  4. Chill and Serve:

    • Place the energy balls in the fridge for about 20-30 minutes to firm up.

    • Store them in an airtight container in the fridge for up to a week.
