One Pot Prawn Laksa

One Pot

I love this lazy one pot. Its so flavour full and faster than ordering it as a takeaway. You can swap out the prawns for tofu or chicken if you prefer. Jazz it up your way. 

Ingredients:

  • 1 can of coconut milk

  • 2 tbsp of laksa paste

  • 1 large pinch of salt

  • 1 tbsp of brown on coconut sugar

  • 2 limes

  • optional 5 lime leaves

  • 1 red chilli chopped

  • 400g of raw prawns

  • 200g of broccoli

  • 3 packs of pakchoi

  • 3 packs of rice noodles

  • sesame seeds

  • 300ml of stock

  • toppings: fresh coriander, sambal and chilli oil. 

Method:

  1. Heat a pot with the coconut milk, curry paste and lime leaves.

  2. Stir in the sugar, chilli, salt and one lime juiced. Simmer for 20 minutes. 

  3. Add the veg and prawns and cook for 5 minutes. Add extra lime juice if needed and salt.

  4. Cook the rice noodles as per pack instructions then add to the laksa. 

  5. Top with extra chilli and sesame seeds and plate with your choice of toppings.
