Bursting with flavour and packed with protein, this omelette is a satisfying and nutritious way to start your day. Ingredients:
3 free range eggs
50g frozen peas
50g chopped kale
½ fresh red chilli
20g flaked almonds
1 lemon, cut into wedges
1 ½ tbsp. avocado oil or olive oil
maldon sea salt and fresh pepper
Method:
Finely chop the chilli and kale
Heat 1 tbsp. of avocado oil in an omelette pan for 30 seconds
Throw in the kale and sauté for 2 minutes
Whisk the eggs in a bowl with a pinch of salt and pepper
Pour the egg mixture into the pan, letting it extend to the pan’s edges
Add the peas and chilli and fry for 30 seconds. Using a wooden spoon, gently draw the mixture towards the centre of the pan, allowing raw egg to move into the gaps
Fold the omelette in half and cook for another 30 seconds
Serve with flaked almonds, a squeeze of lemon juice, remaining avocado oil and some salt and pepper
