Pea and Chilli Omlette

Elevate your breakfast game with our Pea Omelette with a Spicy Kick—a tantalising fusion of fluffy eggs and vibrant peas, seasoned with a fiery touch of chilli. Bursting with flavour and packed with protein, this omelette is a satisfying and nutritious way to start your day. With its zesty heat and hearty texture, it's sure to awaken your taste buds and leave you feeling energized for the day ahead.

Ingredients:

  • 3 free range eggs

  • 50g frozen peas

  • 50g chopped kale

  • ½ fresh red chilli

  • 20g flaked almonds

  • 1 lemon, cut into wedges

  • 1 ½ tbsp. avocado oil or olive oil 

  • maldon sea salt and fresh pepper

Method:

  1. Finely chop the chilli and kale

  2. Heat 1 tbsp. of avocado oil in an omelette pan for 30 seconds

  3. Throw in the kale and sauté for 2 minutes

  4. Whisk the eggs in a bowl with a pinch of salt and pepper

  5. Pour the egg mixture into the pan, letting it extend to the pan’s edges

  6. Add the peas and chilli and fry for 30 seconds. Using a wooden spoon, gently draw the mixture towards the centre of the pan, allowing raw egg to move into the gaps

  7. Fold the omelette in half and cook for another 30 seconds

  8. Serve with flaked almonds, a squeeze of lemon juice, remaining avocado oil and some salt and pepper
