Indulge in a nutritious breakfast with our almond protein pancakes topped with creamy Greek yogurt. These pancakes are a delightful combination of fluffy texture and nutty flavor, providing a satisfying start to your day. With the added protein boost from almonds and Greek yogurt, you'll feel energised and ready to tackle whatever comes your way!
Ingredients:
2 eggs
2 tbsp of ground almonds
1 banana
1 tbsp chia seeds
1 tbsp flax seeds
1/2 tsp cinnamon
1 tbsp butter or coconut oil
150g of greek yogurt
20g of pomegranate seeds or other fruit or choice
Method:
In a blender blend the eggs, banana, chia, flax and cinnamon or 30 seconds.
Heat a frying pan with the butter/oil until hot then fry the pancakes on a medium heat for 2 mins each side until cooked through.
Serve with yogurt and fruit and dig in!
