Raspberry Oat and Almond Muffins

These muffins and so easy to make all you need to do is add all the ingredients to a bowl. Mix well and enjoy! They are great for an on the go breakfast or for an afternoon snack. Packed full on fiber and plant point these are a real winner.
Ingredients:
4 tbsp of maple syrup or sugar
70g coconut oil or butter, mekted
4 eggs
200g of greek yogurt
100g of ground almonds
150g of oats
1 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp cinnamon
1 orange, zest
1/2 tsp vanilla extract
200g frozen raspberries
Method:
Preheat the oven to 180C.
Pop everything into a bowl and mix well.
Pour into a lined muffin tray.
Bake for 25 mins until cooked through.
Store in an airtight container.
These will last for 3 days fresh.
