Raspberry Oat and Almond Muffins

These muffins and so easy to make all you need to do is add all the ingredients to a bowl. Mix well and enjoy! They are great for an on the go breakfast or for an afternoon snack. Packed full on fiber and plant point these are a real winner. 

Ingredients:

  • 4 tbsp of maple syrup or sugar

  • 70g coconut oil or butter, mekted

  • 4 eggs

  • 200g of greek yogurt

  • 100g of ground almonds

  • 150g of oats

  • 1 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1 tsp cinnamon

  • 1 orange, zest

  • 1/2 tsp vanilla extract

  • 200g frozen raspberries


Method:

  1. Preheat the oven to 180C.

  2. Pop everything into a bowl and mix well. 

  3. Pour into a lined muffin tray.

  4. Bake for 25 mins until cooked through.

  5. Store in an airtight container.

  6. These will last for 3 days fresh.
