Shakshuka

I love whipping up a Shakshuka for a weekend brunch and serving with some fresh sourdough bread to soak up those delicious yolks. It’s the perfect nourishing recipe I guarantee you’ll go back to time and time again. Complete the dish with a few warm spices and some fresh herbs. All in just one pan – easy on the washing up, something we all like to hear.

Ingredients:

  • 1 onion, finely chopped

  • 1 tbsp olive oil

  • 1 red pepper sliced

  • 3 garlic cloves sliced

  • 1 tsp of cumin

  • 1 tbsp of harissa paste

  • 1 can of chopped tomatoes

  • Salt and pepper

  • 3 eggs

  • Parsley

  • Toast to serve

Method:

Start by frying the onion and garlic in olive oil for a few minutes. Then add the pepper and fry for 5 minutes adding in the harissa and cumin and stir well. After 5 minutes add the can of tomatoes and simmer for 10 mins with salt and pepper. Make small caves and add the 3 eggs and cook until the egg whites are cooked through. Top with parsley and dip some delicious sourdough in.
