Elevate your potato salad game with this protein-packed version that’s as delicious as it is nutritious. Featuring tender new potatoes, crisp green beans, and vibrant tenderstem broccoli, this salad is a satisfying blend of fresh, wholesome ingredients. Ingredients:
200g of new potatoes
100g of green beans
100g of tenderstem broccoli
salt
Dressing
100g of yogurt
2 tsp of dijon
1 tbsp of capers
1 lemon juiced
2 tbsp of olive oil
1 large garlic clove grated
2 tbsp of chopped dill
2 tbsp of chopped chives
100g of smoked salmon
4 eggs
salt and pepper
Method:
Boil the kettle and fill up one pan halfway with boiled water, add a large pinch of salt.
Cut the potatoes in half.
Add the new potatoes and simmer for 20- 25 mins.
In another pot boil the broccoli and green beans with salt for 5-7 mins, then slice them in half.
Soft boil the eggs for 6 mins.
In a bowl whisk the dressing together. Chop up the smoked salmon.
Allow the veg to cool then add with the dressing.
Peel the eggs and add in the smoked salmon.
Serve with fresh cracked pepper and sea salt.
