Spicy Tuna Crackers

If you need a quick lunch or snack then this is your new go to. Packed full of protein and flavour it is simple and tasty. You can prep the tuna mix the night before and use it on crackers or in sandwiches. I love adding in a little chilli to spice it up and it teams so well with the creamy avocado. 


Ingredients:

Tuna Mix:


  • 1 large can of tuna

  • 1 celery sticks, finely chopped

  • 1/2 red onion, finely chopped

  • 6 cornichons, finely chopped

  • 1/2 lemon juiced

  • 150g of greek yogurt

  • salt and pepper

  • 1 red chilli, chopped

  • 1 tsp of dijon

  • 1 tbsp of chopped parsley

  • 1 tbsp of chopped dill


  • 8-10 crackers 

  • 1 avocado sliced

  • pepper and chilli flakes

  • Chopped walnuts

Method:

  1. Mix the tuna mix together in a bowl.

  2. Slice up the avocado and pop on the crackers.

  3. Top with the tuna mix then add the walnuts, pepper and chilli flakes on top.
