Our veg-packed bolognese is a hearty and nutritious twist on the classic Italian dish, bursting with flavour and wholesome goodness. Packed with a colourful array of vegetables such as carrots, celery, and red peppers, this bolognese sauce is a delicious way to sneak in extra nutrients. Serve over your favourite pasta for a satisfying and wholesome meal the whole family will love.
Ingredients:
1 onion, diced
2 tbsp of olive oil
2 celery sticks
2 carrots
1 red pepper
400g of beef or lamb mince
2 garlic cloves
1/2 tsp of dried thyme
1/2 tsp of dried oregano
1 can of chopped tomatoes
500ml of chicken, beef or veg stock.
100g of tomato puree
2 tbsp of balsamic
salt and pepper
400g of pasta (chickpea, lentil or brown rice)
Method:
Roughly chop the onion, carrot, celery, pepper and garlic. Pop into a blender and blend until finely chopped, roughly 30 seconds.
Heat the oil in a large pot, add the veggies, salt and pepper. Fry for 5- 10. mins then move the veg to the side and fry the mince until brown.
Mix together then add the tomatoes, stock, and puree season then simmer for 1 hour then add the balsamic.
You can serve now but ideally simmer for another 2 hours on low.
Serve with cooked pasta.
