Almond Crusted Chicken Schnitzel with Orange Salad

Tender chicken breasts, coated in crunchy almond crust, are served with a refreshing orange salad, creating a perfect balance of flavors and textures.

Ingredients:

  • 2 LARGE CHICKEN BREASTS

  • 200G CARROTS

  • 1 FREE RANGE EGG

  • 1 ORANGE

  • THE ZEST OF 1 LEMON

  • 1 AVOCADO

  • 100G GROUND ALMONDS

  • FRESH CORIANDER

  • 1 TBSP. SESAME SEEDS

  • 1 TBSP. AVOCADO OIL

  • 1 TBSP. EXTRA VIRGIN OLIVE OIL

  • MALDON SEA SALT AND FRESH PEPPER

Method:

  1. Chop the coriander and mix into a large bowl with the almonds, the zest of 1 lemon and a pinch of salt and pepper

  2. Whisk the egg in a separate bowl Slice each chicken breast in half widthways

  3. Place the chicken breasts between 2 pieces of baking paper. Use your hands or a rolling pin to flatten until thin

  4. Dip each chicken breast into the egg, then coat in the almond mix. Leave breasts to one side

  5. Heat 1 tbsp. avocado oil in a frying pan. Cook chicken breasts for 4 min- utes (each side) until cooked through

  6. To prepare the salad dressing zest and juice the orange, then mix with the extra virgin olive oil, and a pinch of salt and fresh pepper

  7. Thinly slice the avocado and mix with half the dressing

  8. Grate the carrot and mix with the remaining half of the dressing, adding sesame seeds

  9. Serve the chicken breasts on top of the carrot and avocado
