Almond Pancakes with Grilled Banana and Walnuts

Pancakes are the perfect weekend treat, and you can enjoy these ones guilt free. Your skin will be glowing thanks to the vitamin E-rich ground almond that forms the base of these beauties. The bananas provide a nice dose of potassium, so this treat is perfect post-workout.
Ingredients:
100g ground almonds
150g of yogurt
small pinch salt
2 eggs, lightly beaten
100ml almond milk (or other milk of your choice)
1 tbsp of butter or coconut oil
2 bananas
50g walnuts, finely chopped
1 tsp cinnamon
150g of blueberries
Method:
In a bowl whisk the eggs, mash in one banana, milk add the cinnamon and ground almonds and stir well.
Heat a pan with the butter/oil on a medium heat. Allow the pan to heat up for a few mins then add 2 tbsp of the mixture to the pan. Fry for 2 mins each side until golden and cooked through.
Repeat with the rest of the mixture.
Add the other banana sliced to the pan and fry for a few mins until golden.
Top the pancakes with - blueberries, walnuts, yogurt and the banana.
