Almond Pancakes with Grilled Banana and Walnuts

Pancakes are the perfect weekend treat, and you can enjoy these ones guilt free. Your skin will be glowing thanks to the vitamin E-rich ground almond that forms the base of these beauties. The bananas provide a nice dose of potassium, so this treat is perfect post-workout.

Ingredients:

  • 100g ground almonds

  • 150g of yogurt

  • small pinch salt

  • 2 eggs, lightly beaten

  • 100ml almond milk (or other milk of your choice)

  • 1 tbsp of butter or coconut oil

  • 2 bananas

  • 50g walnuts, finely chopped

  • 1 tsp cinnamon

  • 150g of blueberries

Method:

  1. In a bowl whisk the eggs, mash in one banana, milk add the cinnamon and ground almonds and stir well.

  2. Heat a pan with the butter/oil on a medium heat. Allow the pan to heat up for a few mins then add 2 tbsp of the mixture to the pan. Fry for 2 mins each side until golden and cooked through.

  3. Repeat with the rest of the mixture.

  4. Add the other banana sliced to the pan and fry for a few mins until golden.

  5. Top the pancakes with - blueberries, walnuts, yogurt and the banana.
