Beef and Carrot Stew

Get ready to cozy up and enjoy a bowlful of comfort with this simple yet satisfying recipe.

Ingredients:

  • 500G STEWING BEEF

  • 600G GREEN BEANS

  • 1 400G-CAN OF CHOPPED TOMATOES

  • 300G CARROTS

  • 2 WHITE ONIONS

  • 500ML CHICKEN STOCK

  • 1 SPRIG ROSEMARY

  • 3 TBSP. EXTRA VIRGIN OLIVE OIL

  • 1 TBSP. CUMIN

  • FRESH CORIANDER

  • MALDON SEA SALT AND FRESH PEPPER

Method:

  1. Peel the onions and roughly chop

  2. Cut the carrots into small chunks

  3. Place olive oil in a large pot on medium heat. Add the cumin and a pinch of salt

  4. After 2-3 minutes, add the onions and carrots

  5. Add the beef and brown for 1 minute.

  6. Add the chicken stock, rosemary and tomatoes and a pinch of salt

  7. Reduce the heat and simmer gently for 2 – 2.5 hours

  8. 5 minutes before serving, steam the green beans and dress with olive oil, salt and pepper.

  9. Sprinkle with fresh coriander leaves
