Get ready to cozy up and enjoy a bowlful of comfort with this simple yet satisfying recipe.
Ingredients:
500G STEWING BEEF
600G GREEN BEANS
1 400G-CAN OF CHOPPED TOMATOES
300G CARROTS
2 WHITE ONIONS
500ML CHICKEN STOCK
1 SPRIG ROSEMARY
3 TBSP. EXTRA VIRGIN OLIVE OIL
1 TBSP. CUMIN
FRESH CORIANDER
MALDON SEA SALT AND FRESH PEPPER
Method:
Peel the onions and roughly chop
Cut the carrots into small chunks
Place olive oil in a large pot on medium heat. Add the cumin and a pinch of salt
After 2-3 minutes, add the onions and carrots
Add the beef and brown for 1 minute.
Add the chicken stock, rosemary and tomatoes and a pinch of salt
Reduce the heat and simmer gently for 2 – 2.5 hours
5 minutes before serving, steam the green beans and dress with olive oil, salt and pepper.
Sprinkle with fresh coriander leaves
