I love this breakfast bowl. Packed full of protein, omega 3s and probiotic rich kraut. This bowl is the perfect way to set you up for the day.
Ingredients:
2 eggs
75g of smoked salmon
1 slice of sourdough/gf/rye bread
1 carrot grated
2 tbsp of sauerkraut
Quick pickled onion
1 onion
4 tbsp of apple cider vinegar
salt and pepper
1 tsp of fennel or cumin seeds
Method:
Slice the onion finely. Pop into a jar with the vinegar, large pinch of salt, pepper and seeds. Leave to soak for 10 mins.
Boil the kettle then boil the two eggs in a pot for 7 mins.
Toast the bread.
Grate the carrot and plate it with the rest of the ingredients.
