Breakfast Bowl

I love this breakfast bowl. Packed full of protein, omega 3s and probiotic rich kraut. This bowl is the perfect way to set you up for the day. 

Ingredients:

  • 2 eggs

  • 75g of smoked salmon

  • 1 slice of sourdough/gf/rye bread

  • 1 carrot grated

  • 2 tbsp of sauerkraut


Quick pickled onion


  • 1 onion

  • 4 tbsp of apple cider vinegar

  • salt and pepper

  • 1 tsp of fennel or cumin seeds

Method:

  1. Slice the onion finely. Pop into a jar with the vinegar, large pinch of salt, pepper and seeds. Leave to soak for 10 mins. 

  2. Boil the kettle then boil the two eggs in a pot for 7 mins.

  3. Toast the bread.

  4. Grate the carrot and plate it with the rest of the ingredients.
