Chickpea and Kale Stew

Indulge in a hearty and wholesome stew packed with protein and nutrients. Chickpeas and kale simmered in a flavorful broth create a satisfying dish that's both comforting and nutritious.

Ingredients:

  • 1 400G-CAN OF CHICKPEAS

  • 1 400G-CAN OF TOMATOES

  • 100G KALE 1 WHITE ONION

  • 1⁄2 FRESH RED CHILLI

  • 2 GARLIC CLOVES

  • 2 TBSP. FRESH GRATED GINGER

  • 1 TBSP. AVOCADO OIL

  • 1 TSP. GROUND CUMIN

  • 2 TSP. GROUND CORIANDER

  • 1 TSP. GARAM MASALA

  • 1 PINCH CHILLI FLAKES

  • MALDON SEA SALT AND FRESH PEPPER

Method:

  1. Finely dice the onion and fresh red chilli

  2. Dry fry the cumin and coriander in a large pot for 30 seconds

  3. Add the avocado oil and onion

  4. Sauté for 5 minutes

  5. Crush the garlic and throw it in with the ginger and some cracked pepper, stir for a minute

  6. Add the tomatoes, kale and chickpeas

  7. Add the chilli and garam masala

  8. Cook for 30 minutes, constantly stirring. Serve hot and season to taste
