Chopped Chicken Salad

This is a great protein packed salad. I love how many veggies you get in. Just chop it up and mix with this delicious vinaigrette.
Ingredients:
4 chicken thighs
2 tbsp of olive oil
salt and pepper
1 lemon zest
1/2 cucumber, cubed
6 radishes, cubed
1 cos lettuce, sliced
100g of cherry tomatoes, quartered
2 tbsp of sesame seeds
Dressing
4 tbsp of olive oil
2 tbsp of apple cider vinegar
1 tbsp of dijon mustard
salt and pepper
Method:
Heat a frying pan. Season the chicken with salt, pepper and lemon zest.
Add 2 tbsp of olive oil to the pan and fry the pans and fry each side for 4-5 mins until golden brown and cooked through.
Pop to the side to rest and drizzle over the juice of the lemon.
Chop the veggies.
Whisk the dressing together.
Pop everything into a bowl, mix well and top with dressing and sesame seeds.
