Green Matcha Energy Balls

Fiber Rich

Matcha is a total superfood, it gives you that kick of caffeine without the crash. It's quite powerful stuff, so here I've mixed it with dates, cinnamon and coconut to make it super-enjoyable.

Ingredients:

  • 100g cashew nuts

  • 150g pumpkin seeds

  • tiny pinch salt

  • 1 tbsp of matcha powder

  • 200g Medjool dates

  • 2 tbsp coconut oil

Method:

  1. Place all the ingredients into the food processor. 

  2. Process for 2 minutes then roll into balls roughly 10-12.

  3. Pop in the fridge to harden.

  4. Then store in the fridge. These will last 1-2 weeks in the fridge in an airtight container.
