Lemon Dhal With Spinach

This protein packed Lemon Dhal with Spinach recipe is a nourishing and wholesome choice. Bursting with zesty lemon flavour and delicious spices it makes a hearty lunch or dinner. 


Ingredients:

  1. 1 onion, finely chopped

  2. 2 garlic cloves, minced

  3. 1 small finger of ginger, grated

  4. 1-2 green chilies, chopped (optional, adjust to taste)

  5. 200g red lentils, rinsed

  6. 500ml stock (or water)

  7. 1 can (400ml) coconut milk

  8. 200g frozen spinach

  9. Juice of 1 lemon

  10. Salt and pepper, to taste

For Garnish:

  1. Pickled red onion, a few spoonfuls (for tangy flavor)

  2. 2 tbsp Greek yogurt (optional, for creaminess)

  3. Fresh coriander, a handful, chopped

  4. Sesame seeds, toasted (optional, for crunch)

Method:

  1. Cook the Onion, Garlic, Ginger, and Chilli:

  2. Heat a little oil in a large saucepan over medium heat. Add the onion, garlic, ginger, and green chilli (if using). Fry for about 5 minutes until softened and aromatic.

  3. Add the Red Lentils and Stock:

  4. Add the red lentils to the pot and stir them in with the cooked onion mixture.

  5. Pour in the stock and coconut milk and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cook for about 20 minutes, stirring occasionally, until the lentils are soft and starting to break down.

  6. Stir in Spinach and Lemon:

  7. Once the dhal has thickened to your liking, add the spinach and cook for an additional 5 minutes.

  8. Stir in the fresh lemon juice and season with salt and pepper to taste.

  9. Serve:

  10. Ladle the dhal into bowls and garnish with pickled red onion, a dollop of Greek yogurt, a sprinkle of fresh coriander, and a few toasted sesame seeds for crunch.
