Spiced Mackerel with Carrot Mash and Broccoli

Elevate your dinner with this flavourful dish. Succulent mackerel fillets, seasoned with aromatic spices, are served alongside creamy carrot mash and vibrant broccoli, creating a nutritious and delicious meal.

Ingredients:

  • 1 MACKEREL FILLETS

  • 200G CARROTS

  • 1/2 HEAD OF BROCCOLI

  • 1/2 RED ONION

  • 1 LARGE GARLIC CLOVE

  • 1/2 LIME

  • FRESH CORIANDER

  • 1 TBSP. AVOCADO OIL

  • 1⁄2 TSP. SMOKED PAPRIKA

  • 1⁄2 TSP. GROUND CUMIN

  • MALDON SEA SALT AND FRESH PEPPER

Method:

  1. Roughly chop the carrots into small pieces, finely slice the onion, cut the broccoli into florets and crush the garlic

  2. Heat 1 tbsp. avocado oil in a large pan with a pinch of salt and crushed garlic for 2-3 minutes

  3. Add the carrots and sauté for a few minutes until slightly golden 

  4. Pour in 200ml boiled water. Bring the pot to the boil

    then simmer for 10 minutes

  5. Mash the carrots with a big pinch of salt, fresh pepper, 1 tsp. cumin and 1 tbsp. extra virgin olive oil

  6. Rub the smoked paprika and cumin onto the mackerel

  7. Heat 1 tbsp. avocado oil and sauté the sliced onion for 5 minutes until cooked through

  8. Meanwhile steam the

    broccoli for 4 minutes

  9. Move the onion to the side of the pan. Place the mackerel fillets in the pan and fry each side for 2 minutes

  10. Serve mackerel with the broccoli, onions and mash, adding a squeeze of lime juice and freshly chopped coriander
