Sweet Potato and Carrot Soup

Warm up with a bowl of comforting soup featuring sweet potatoes and carrots. This creamy soup is perfect for chilly days and is sure to become a new favourite.

Ingredients:

  • 500G SWEET POTATOES

  • 200G CARROTS

  • 1 WHITE ONION

  • 1 GARLIC CLOVE

  • 1 POMEGRANATE DESEEDED

  • 100ML YOGHURT

  • 500ML CHICKEN OR VEGGIE STOCK

  • 2 TBSP. AVOCADO OIL

  • 2 TBSP. RED THAI CURRY PASTE

  • 1 TSP. CORIANDER

  • 1 TSP. GROUND CUMIN

  • MALDON SEA SALT AND FRESH PEPPER

Method:

  1. Peel and chop the carrots and sweet potatoes into even bite size chunks

  2. Crush the garlic 

  3. Combine 1 tbsp. of avocado oil with the garlic, curry paste, cumin, coriander and a grind of salt and pepper, then rub over the carrots and potatoes in a bowl

  4. Heat remaining avocado oil in a large pan on a medium heat for 1 minute; add the chopped onions and sauté for 5 minutes

  5. Add the sweet potato and carrots and sauté for a further 3 minutes, constantly stirring so that nothing burns

  6. Add the stock to the pan and bring to a simmer for 45 minutes

  7. Puree the contents of the pan with a hand blender

  8. Serve with a swirl of yoghurt and pomegranate seeds
