Warming Chicken Soup

Embrace the cozy comfort of a classic chicken soup. Tender chicken, hearty vegetables, and aromatic herbs simmer together in a flavorful broth, perfect for nourishing both body and soul on chilly days.

Ingredients:

  • 500ML FRESH CHICKEN STOCK

  • 2 CHICKEN BREASTS, CUT INTO 1-INCH CUBES

  • 1 CELERIAC

  • 200G MANGE TOUT

  • 75G FROZEN PEAS

  • 2 SPRING ONIONS

  • 2 GARLIC CLOVES

  • 1 TSP. FRESH GRATED GINGER

  • 1 TBSP. AVOCADO OIL

  • 1 TBSP. EXTRA VIRGIN OLIVE OIL

  • 250ML WATER

  • 1⁄2 TSP. SMOKED PAPRIKA

Method:

  1. Crush the garlic, heat the avocado oil in a small pot

  2. Finely chop the spring onions

  3. Throw into the pot with the crushed garlic, grated ginger and a pinch of salt. Sauté for 2-3 minutes

  4. Add the chicken and allow to brown. Pour over the fresh chicken stock and 250ml water

  5. Bring to the boil then let simmer for 5 minutes

  6. Chop the mange tout into matchsticks

  7. Throw the mange tout into the pan with the peas. Season with salt and pepper, then cook for another 3 minutes until the chicken is cooked through

  8. To make the mash, peel and chop the celeriac into small pieces. Boil with 200ml of water for 15 minutes until cooked through then blend with a spoonful or two of the leftover boiled water, olive oil, salt, pepper and smoked paprika

  9. Serve the soup with a side of the celeriac mash
