Overnight Oats with Stewed Apple

This delicious overnight oats is so simple to make. I love making this dish as it makes my mornings run smoother and it means Im not cooking in the morning and can crack on with my day. 

Ingredients:

Stewed Apple


  • 2 Apples

  • 1 Clove

  • 1 Tsp Cinnamon

  • Zest And Juice Of 1 Orange

  • ½ Tsp. Vanilla Extract

Oats


  • 80g Gluten-Free Oats

  • 500ml Rice Milk

  • 1 Tsp. Cinnamon

  • ½ Tsp. Vanilla Extract

  • 25g Pumpkin Seeds

  • 2 Tbsp. Flaxseeds

  • 2 Tbsp. Tahini

Method:

  1. . Remove the apple cores and roughly chop with skins on

  2. Place chopped apples in a saucepan with the cloves, cinnamon, vanilla extract, and orange juice and zest

  3. Stew for 20 minutes, stirring occasionally, until the apples are soft

  4. In a bowl, mix the oats, rice milk, flaxseeds, ground cinnamon and vanilla extract. Cover and refrigerate overnight

  5. In the morning, remove the oats from the fridge

  6. Serve the oats warm or cold with the toasted pumpkin seeds, stewed apple and a drizzle of tahini
