Prawn and Avocado Rice Paper Rolls

Enjoy a fresh and flavourful bite with these Prawn and Avocado Rice Paper Rolls, a perfect blend of light and satisfying ingredients. These rolls combine succulent prawns, creamy avocado, and crisp vegetables, all wrapped in delicate rice paper for a dish that’s as beautiful as it is delicious. Paired with a tangy dipping sauce, they make an excellent appetizer, light lunch, or healthy snack. Easy to make and bursting with vibrant flavors, these rice paper rolls are sure to become a go-to favourite for any occasion.


Ingredients:

  • 10 rice paper pancakes

  • 300g of cooked prawns

  • 1 avocado, sliced

  • 1/2 red pepper, thinly sliced into matchsticks

  • 1/4 cucumber, thinly sliced into matchsticks

  • 1/4 carrot, cut into matchsticks

  • 10g of fresh mint leaves

  • sesame seeds


Peanut dressing


  • 2 tbsp of peanut butter

  • 1 tbsp of soy or tamari

  • 1 tsp of minced ginger

  • 1/2 tsp of minced garlic

  • 1 tbsp of sriracha

  • 1-2 tbsp of water

Method:

  1. Get everything prepped. Chop up all your veggies and have everything laid out on a chopping board.

  2. Grab a large plate and add some warm water to it.

  3. Place one of the rice paper into the warm water. Coat each side then pop onto a flat surface. 

  4. In the middle add 3 mint leaves then top with 3 prawns, add a few sliced of avocado and a few of each of the veggies.

  5. Wrap like a burrito - folding the left side in then the right. Roll the bottom up then keep rolling so it is nice and tight.

  6. Pop to the side the repeat with the rest.

  7. Mix the dipping sauce together with som water for desired consistency.

  8. Serve together with sesame seeds.
