Chicken and Olive Salad

Enjoy a light and refreshing salad bursting with Mediterranean flavors. Tender chicken strips, mixed greens, and briny olives are tossed in a zesty dressing for a satisfying and flavorful meal.

Ingredients:

  • 2 LARGE CHICKEN BREASTS

  • 200G OLIVES

  • 2 AVOCADOS

  • 1 HEAD COS LETTUCE

  • 1 LEMON

  • 1 GARLIC CLOVE

  • 3 TBSP. AVOCADO OIL

  • 1 TSP. GROUND CUMIN

Method:

  1. Crush the garlic and rub with the chicken, cumin and avocado oil

  2. Heat a griddle pan over a medium heat for a few minutes, then put the chicken on it and griddle for 6 minutes on each side

  3. After 6 minutes, turn every minute until the chicken is cooked through

  4. Make a salad dressing by mixing the zest of the lemon with avocado oil

  5. Thinly slice the lemon and put it on the griddle alongside the chicken for a minute or so on each side

  6. Slice off the bottom of the cos lettuce and break up the leaves, cut the avoca- dos into chunks and cut the olives in half

  7. Combine the cos lettuce, avocado and olives in a bowl, thinly slice the griddled chicken and scatter over the bowl of salad. Serve with the dressing and grilled lemon
