Lamb Koftas with Carrot, Radish & Apple Salad and Baked Tortilla Chips
This Lamb Kofta recipe is bursting with flavor. The lamb is a great source of protein and the spices add that comforting kick. Serve with the Carrot, Radish & Apple salad and Baked Tortilla Chips for a well rounded comfort Dinner packed with nutrition.
Ingredients:
For the Lamb Koftas:
400g lamb mince
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
½ tsp chilli powder (adjust to taste)
Salt and pepper, to taste
1-2 tbsp olive oil (for cooking)
For the Salad:
1 large carrot, grated or julienned
5-6 radishes, thinly sliced
1 apple, thinly sliced or julienned
Juice of ½ lemon
Salt and pepper, to taste
1 tbsp of olive oil
For the Baked Tortilla Chips:
2 large tortilla wraps
1 tbsp olive oil
Salt, to taste
For the Yogurt Mint Sauce:
100g natural yogurt
A handful of fresh mint leaves, chopped
Salt and pepper, to taste
Method:
Prepare the Lamb Koftas:
In a mixing bowl, combine the lamb mince with cumin, coriander, paprika, chilli powder, salt, and pepper.
Mix thoroughly, then form the mixture into small sausage shapes or patties.
Heat a skillet over medium-high heat, add the olive oil, and cook the koftas for about 8–10 minutes, turning frequently until golden brown and cooked through. Set aside.
Prepare the Salad:
In a bowl, combine the grated carrot, sliced radishes, and apple.
Squeeze over the lemon juice, olive oil then season with salt and pepper. Toss to coat and set aside.
Make the Baked Tortilla Chips:
Preheat the oven to 180°C (350°F).
Cut the tortilla wraps into triangles and place them on a baking tray.
Brush each piece lightly with olive oil and sprinkle with salt.
Bake for 8–10 minutes or until golden and crisp. Keep an eye on them to prevent burning.
Prepare the Yogurt Mint Sauce:
In a small bowl, combine the yogurt with fresh mint, and season with salt and pepper.
Serve:
Plate the lamb koftas alongside the carrot, radish, and apple salad.
Add the baked tortilla chips on the side.
Serve with a dollop of yogurt mint sauce on top or on the side, garnished with extra mint if desired
